Students will study nutrition, the history of cooking, sanitation, safety, and basic knife skills. They will rotate through all areas of the kitchen including the dish area, pantry, hot station, bakery, line, short order station, and guest service. Also basic cooking principles for meats, poultry, seafood, stocks, sauces, soups, vegetables, and starches will be taught. Students will also be introduced to cakes, cookies, pies, breads, etc. They will serve as shift supervisors and perform management duties. Actual work experience is provided through the campus cafeteria assignments, catering at banquets and parties, and serving monthly at the Friday Night Fine Dining.
