Graduates of the program typically begin their careers in an entry level cook?s position, progress to a sous chef position, then chef, executive chef , and possibly manager. Should graduates wish to pursue a degree, all but two of the courses in this program are also part of the A.S. program in Foodservice Management. PROGRAM OUTCOMES The Culinary Arts Certificate program will enable students to: 1. Learn and practice the technical skills used in food preparation and service; 2. Understand the principles of food identification, food and beverage composition and nutrition; 3. Acquire basic supervisory skills to better use human and physical resources in food service operations; 4. Gain hands-on experience in the proper use and maintenance of professional foodservice equipment; 5. Become familiar with the layout and workflow of professional kitchens; 6. Gain appreciation for the history, evolution and international diversity of the culinary arts; 7. Develop a personal sense of professionalism necessary for working successfully in the food service and hospitality industry; 8.
